This recipe pays homage to the legendary Kerbey Lane queso, featuring the robust flavors of Chile con queso and hearty black beans. Enhanced with zesty pico de gallo and creamy avocado, this cheese dip captures the essence of Austin's Tex-Mex cuisine. Prepare yourself for a bowl of velvety queso that brings the perfect combination of flavors and textures.

Bold and Savory: Kerbey Lane-Inspired Hearty Queso with Black Beans


  • 2 tablespoons butter

  • 1/2 red onion, diced

  • 1/2 jalapeno, seeded and diced

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/4 teaspoon red pepper flakes

  • 1/2 teaspoon garlic powder

  • 12 oz shredded white American cheese

  • 4 oz shredded jalapeno jack cheese

  • 1/2 - 2/3 cup whole milk or half & half

  • Don't forget your favorite tortilla chips!

For the Pico de Gallo:

- 1/2 jalapeno, diced

- Handful of cilantro, chopped

- 1/2 red onion, diced

- 1/2 tomato, chopped

- Juice of 1 lime

- Pinch of salt

- 1/4 teaspoon red pepper flakes

For the Guacamole:

- 1 avocado

- Juice of 1 lime

- Salt & pepper, to taste

- 1/4 teaspoon red pepper flakes

- Pico de gallo (from the recipe above)


Here we go!

  1. Let's start with the pico de gallo. In a bowl, mix together the jalapeno, cilantro, red onion, tomato, lime juice, salt, and red pepper flakes. Set it aside at room temperature while we prepare the queso.

  2. Now, let's make the guacamole. Remove the pit from the avocado and chop it. Add it to a small bowl and use a fork to mash it to your desired smoothness. Squeeze in the lime juice, and season with salt, pepper, and red pepper flakes. Stir in your desired amount of pico de gallo (save a spoonful for later). Cover the guacamole with plastic wrap, pressing it onto the surface to prevent browning. Store it in the fridge until ready to use.

  3. Time to make the queso! Melt the butter in a pan over medium heat. Add the diced red onion, jalapeno, salt, pepper, red pepper flakes, and garlic powder. Cook for a few minutes until the onions and jalapenos soften.

  4. Add the shredded white American cheese and 1/4 cup of milk to the pan. Stir until the cheese is mostly melted.

  5. Gradually add more milk, a little at a time, whisking continuously to incorporate it properly. Add enough milk to achieve your desired consistency, whether you prefer a thick or thin queso.
